The fine flavour gives vegetable dishes, soups and salad an unmistakable taste. Red clover sprouts contain vitamins C and E, as well as essential oils, minerals and phytoestrogens (isoflavones). They are especially rich in the isoflavones genistein and daidzein and two other kinds of isoflavonoids (biochanin A and formononetin). In contrast, soy only contains two kinds of isoflavones. Preparation They can be prepared in numerous ways and served both in cold or warm dishes. Germination time varies from 2 to 8 days depending on the type of seeds, and can be partially extended; the sprouts can be eaten until green shoots appear. Storage Store in a cool, dry place out of direct sunlight.
